So, we heard you loud and clear on your desire to drink Pumpkin Spice Lattes here in our UK stores and so I got to work on what sweet treat would make the perfect complement to this warming drink. A Pumpkin Spice Loaf Cake, of course! Inspired by the recipe of the cake that has been a hit in our US stores for a few years now, I asked our bakery to go try some pumpkin along with the flour, eggs, sugar and spices they are more familiar to mixing up and baking.
We’ve really enjoyed the sampling sessions over the past few months as we’ve developed this recipe. We’ve dabbled with different proportions of cinnamon and of nutmeg until we found the perfect amount of spice, then we topped the cake with tasty pumpkin seeds.
