Water is a precious natural resource. As a key ingredient in most of our beverages, it’s essential to the operation of our stores.
A great deal of the water we use in our stores is to make coffee and tea beverages and for "back of the house" operations, such as running dishwashers and ice machines. We’re working to better understand how we use water, and how we can use it more responsibly.
We’ve identified a number of opportunities to use this precious resource more wisely and have spent the last few years testing, validating and implementing these solutions. Since 2008 we have cut water consumption by over 23%—putting us within reach of achieving this ambitious goal. Our water savings have come through several measures, including installing efficient fixtures; monitoring consumption to identify spikes in water usage and targeting leak repairs; and upgrading the water filtration systems in our stores.
We continue to include water-saving technology in our equipment specifications. For example, our mechanical dishwashers use less than 5 litres of water per cycle through high pressure spray arms.In many markets, we use a blast of higher-pressure water to clean blender pitchers instead of an open tap. We’ve also programmed our espresso machines to dispense less water when rinsing espresso shot glasses.
We also train our partners (employees) to keep the refrigeration coils on ice machines clean to reduce the amount of latent heat from the machines, minimize ice melt and turn off taps when not required.
We continue to work closely with our water suppliers to identify report and rectify any leaks across the estate to ensure water is not being unnecessarily wasted.
